Just Stuff It – Recipe Style!

When Aileen, Erin and I were selecting recipes to prepare and share, Easy Stuffed Peppers didn’t really excite me. I had forgotten what an hour and a half in the oven does to such simple ingredients, and what the resulting tasty comfort food does not only for the body, but also for the soul.

Stuffed Peppers Going Into Oven

Easy Stuffed Peppers*

Servings: 6Stuffed Peppers Plated

Ingredients:
– 5-6 green bell peppers
– 1 1/2 lbs. ground round
– 1 tsp. salt
– 1/2 tsp. pepper
– 1 small onion, chopped
– 1 small clove garlic, minced (optional)
– 1 can tomato soup
– 1 small can tomato sauce
– 1 egg, slightly beaten
– 2/3 c. uncooked Minute rice
– 2 c. tomato juice
Instructions:
1. Wash 5-6 green peppers. Slice off tops and set aside with peppers. Remove seeds and membranes. Rinse the inside of peppers with water and tip upside down on paper towel to drain. (Erin had the clever idea of just skimming the tips off of the bottom of the pepper so that they would sit flat.)
2. Mix together the meat, spices, onion, soup, tomato sauce, rice and egg; fill each pepper; top with pepper top. (We precooked the meat and rice, but that is not necessary. We also choose not to cook the pepper top.)
3. Set each in a baking pan  (at least 4 inches deep) and add 1 cup of water. Pour the tomato juice over peppers.
4. Cover and bake at 350° for 1 1/2 to 2 hours until soft and tender. Turn down oven if needed; peppers should not brown.
