Avocado does seems to be the “cool kid on the block” these days! But in all seriousness … this salad!!!😍 Healthy. Soooo flavorful. Light-yet-filling and appet-EYE-zing. Where do you even begin?!
If it’s true that you eat with your eyes first, then let’s start there. With invigorating hues of orange and bright green, this salad does not disappoint! And as appet-EYE-zing as it looks, the taste is even more uh-MMM-azing!
Avo lovers will need no encouragement to dive right into this spectacular salad. But if you are on the fence with avocado devotion, this salad is the perfect place to start! The intriguing combination of flavors and textures in this salad play so well together; not one ingredient overpowers another. But this salad, packed full of nutrients, is a power-play for your day!
Avocado is loaded with nutrients and full of good fats, which can help you absorb nutrients from plant foods – a win-win in this salad recipe from Bronner’s 2nd edition of “Flavorful Favorites.” Oranges host their own vitamin and mineral benefits like vitamin C, calcium and magnesium, just to name a few.

This salad is SO SATIATING!! Nothing is worse than when you’re trying to “eat healthy” only to find yourself scouring the kitchen a half-hour later from (what feels like) starvation … Okay, that might be a bit dramatic. But I’m sure someone else has felt this way, too. (Please tell me I am not the only one?!) I have found that adding good fats like avocados and walnuts to salads staves off the aforementioned side affect from skimpy salads, I’m full for HOURS! Plus I know my body is absorbing all the nutrients properly, which makes me feel like I am not eating salad in vain.
Despite the fact that I’ve had avos in many different types of dishes, I’d never had them paired with oranges. Can I just say, WOW! Creamy avocado and sweet juicy oranges are balanced by the tang of feta cheese and onions on a flavorful palette of fresh, crisp lettuce.

I’ve tried to do this salad justice, but really, you just have to try this for yourself! I think you’ll be just as amazed at how deliciously dynamic this bright and colorful salad is!
AVOCADO ORANGE SALAD
– 2 cups torn salad greens
– 1 naval orange, peeled and sectioned
– 1 lg. ripe avocado, peeled and sliced
– 1 small onion, chopped or sliced thin
– 1 Tbl. chopped walnuts, optional
– 1 Tbl. crumbled feta cheese, optional
Citrus Dressing Ingredients:
– 1/8 cup vegetable oil
– 2 Tbl. orange juice
– 1 Tbl. lemon juice
– 1 Tbl. sugar
– ½ tsp. grated orange peel
– 1/8 tsp. salt
– 1/8 tsp. celery seed
Alternate Dressing Ingredients:
– 1 Tbl. fresh-squeezed orange juice
– 1 tsp. lemon juice
– 2 Tbl. white vinegar
– ¼ tsp. mustard powder
– ¼ tsp. black pepper, coarsely ground
– 1 Tbl. minced scallions
– ½ tsp. minced garlic
1. Arrange torn salad greens, orange, avocado and onion slices.
2. In a jar with a tight-fitting lid, combine dressing ingredients; shake well.
3. Drizzle over salad.
4. Top with walnuts and feta cheese if desired.
5. Serve immediately.
